I have no idea why I’ve decided to call these “snack cakes” as opposed to pancake, but let’s go with it.
These little pancakes or snack cakes or whatever we are calling them are incredibly easy and quick to whip up. I made a batch on a whim for a quick snack yesterday and had no idea if they would even work but they did. I even managed to photograph them before devouring that stack in 2 minutes flat.
I’m going to be a bit brief today since my to-do list is a mile long, there isn’t enough coffee in the world, and getting out of my chair is a bit difficult thanks to 3 days of squats. I’m thinking that another batch of these, complete with obnoxious amounts of almond butter spread (just almond butter + coconut or almond milk to thin it out) are definitely in order today.
Coconut Flour & Banana Snack Cakes
Ingredients
- 1 medium banana, mashed
- 2 tablespoons coconut flour
- 1 teaspoon cinnamon
- 4-5 large egg whites (or about 1 cup liquid egg whites)
- 1/2 teaspoon vanilla extract
- 1 tablespoon coconut oil, for cooking
Directions
| 1. | Mash up your banana and place in a blender or large bowl that is compatible with your immersion blender. |
| 2. | Add remaining ingredients, except coconut oil, and blend until very smooth and slightly thickened. |
| 3. | Heat coconut oil over medium heat in a non stick skillet. Pour batter onto pan once hot in small, sand-dollar sized circles. |
| 4. | Let cook for 3-5 minutes until small bubbles appear and cakes can be easily flipped. Be patient! |
| 5. | Flip and cook another 3-5 minutes until cooked through. Serve with melty almond butter, coconut milk, or whatever your heart desires! |
P.S. I think these would definitely work as full pancakes and you could probably use whole eggs as well, maybe just reduce the egg amount to 2 or 3 eggs and go from there.

I just bought coconut flour! Will have to try these.
There is something about the egg/banana/coconut/almond combination that just wins every time. I will def try this mixture soon (I usually just do egg/banana, topped with almond butter).
I’ve made Civilized Caveman banana bread 100 times and with very similar ingredients, I can imagine this is just as tasty.
