So, I got this wild idea to make a cooking video of this dish.
I’m not really sure why I decided to make a video – perhaps just so everyone can experience my awkwardness? Yup, that’s it. Forewarning: I talk with my hands, there is some quality yellow indoor lighting, it’s done on my iPhone….and I’m awkward.
Please ignore my wet post-shower hair (I’m classy) and my ripped-up, band-aid, slightly stigmata-esque hands. Also, sorry about the poor lighting & camera work – it’s very dark & cloudy today and I’m by myself.
Don’t ignore the food though – this stuff is GOOD.
Brussel Sprout Breakfast Hash with Bacon & Apples

| Prep time | 15 minutes |
| Cook time | 30 minutes |
| Total time | 45 minutes |
Ingredients
- 1 1/2 tablespoon coconut oil, divided
- 1/2 small onion, thinly sliced
- 1 teaspoon dried oregano
- dash of allspice
- 1/2 large apple, cut into small cubes
- 1-2 cup shredded brussel sprouts
- 2 slices bacon, cooked, cooled, and crumbled
- 2 over-easy or fried eggs
Directions
| 1. | Heat non-stick skillet over medium heat until hot. Add 1 Tbsp coconut oil to pan and add onions. Saute until transculent and slightly browned, about 3-5 minutes. |
| 2. | Add oregano and allspice and saute until fragrant, about 30 seconds. Add apples and saute until just beginning to soften, another 3 minutes. |
| 3. | Add shredded brussel sprouts and saute for 3-5 minutes until slightly wilted and crisp. |
| 4. | Top with crumbled bacon and 2 over easy eggs. |
