Grain-Free, No Bake Gingerbread Truffles

So…I’m on a bit of Christmas cookie/baking bender right now. In case you didn’t notice by the copious amounts of baking posted on my Instagram (Find me at gabbysgfree!)yesterday.

Grain-free sugar cookies (used this recipe from Urban Poser – fantastic). Then I dipped them in chocolate. And then I made bark out of the leftover chocolate. Yeah, there is no foreseeable end in sight.

Anyways, I’m not here to talk about the cookies. I’m here to talk about these little bites of gingerbread heaven.

I’m slightly obsessed with all things gingerbread – I love the spicy, molasses flavors and gingerbread cookies have always been my favorite. The other day I had a major gingerbread craving and didn’t feel like making cookies so I decided to try making some “no bake” truffles instead.

I made a small batch of 6 truffles with plans to have some for the rest of the week… they didn’t even make it past 8pm. Word of warning: these are hard to stop eating, so make plenty :-)

Grain-Free Gingerbread Truffles

Serves 12 small truffles
Prep time 5 minutes

Ingredients

  • 1 cup blanched almond flour
  • 2 tablespoons coconut oil (room temperature, it should be slightly soft but not melted)
  • 1 tablespoon blackstrap molasses (can use maple syrup instead but this gives it a true gingerbread taste)
  • 2 tablespoons coconut milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • pinch of salt
  • sprinkles (for garnish, or you can use shredded coconut)

Directions

1. Combine all ingredients in a bowl and mix together until a firm dough forms.
2. Roll into small balls and roll in sprinkles or shredded coconut. Refrigerate until serving. These will get soft quickly due to the coconut oil.
