Let’s just call this the best afternoon snack ever.
I had something else entirely planned for today but this was just too good not to share. I wish I had taken some not-iPhone photos but truth is, I wasn’t planning on posting it and I was hungry. I may or may not have burned my mouth a little because I couldn’t wait for it to cool. Yeah, it was worth it.
Chocolate + almond butter in a high protein, paleo friendly package. This little snack is about 120 calories with 3g fat, 12g carbs, nearly 7 grabs fiber!, and 18g protein (with liquid stevia sweetener & without almond butter) meaning it has serious staying power. This little souffle kept me full for HOURS and normally, I’m a complete snack monster in the afternoon. Plus, it’s CHOCOLATE – like I said, best snack ever.
Chocolate Protein Souffle
Ingredients
- 4 egg whites
- 2 1/2 tablespoons cocoa powder
- 1 tablespoon coconut flour
- 1/2 teaspoon ground cinnamon
- liquid stevia, honey, or maple syrup (use as much or as little as you like)
- lots of almond butter (for topping)
Note

Directions
| 1. | Preheat oven to 375F and grease a large ramekin or other oven safe dish with coconut oil. |
| 2. | Whisk all ingredients together until incorporated. |
| 3. | Pour batter into ramekin and bake for 25-30 minutes until puffed and set. It will be firm to the touch. |
| 4. | Top with generous amounts of almond butter. |

I think I saw you post this on IG the other day, the pic looks familiar…this sounds great! I’ve bee experimenting with coconut flour for a while…most of them ending in failure lol, so I’ll definitely give this a whirl…ya know, since you already did all the work!!
