No-Bake Brownie Bites with Toasted Coconut

What happens when you come back from a mini one-day vacation and realize there is laundry, shoot prep, food prep, and cleaning that has to be done?

No-bake brownies and toasted coconut happen, obviously.

I need to hide these from myself because I’m sure I could eat the entire batch in one sitting.

But first, I should probably get started on that laundry. See you all soon with a crossfit update, life update, and some other fun things!

No-Bake Brownie Bites with Toasted Coconut

Yields: 12 small bites
Adapted from my paleo brownie recipe

1/3 cup almond butter
1/4 cup almond meal
2 Tbsp. cocoa powder
1 tsp. water (more if needed)
1/2 tsp. ground cinnamon
1 Tbsp. maple syrup (or liquid sweetener of choice)

toasted coconut

1. Combine all ingredients, except coconut, in a medium sized bowl and mix until incorporated in a thick and sticky batter.
2. Roll batter into tablespoon sized balls.
3. Roll balls in toasted coconut.
4. Keep refrigerated and try to make them last more than 24 hours (good luck).

      Thanks! Nutrition stats are approximately 70 calories, 6g fat, 5g carbs, and 2g protein per bite (for coconut I used 1/4cup of unsweetened coconut flakes). It will vary depending on your ingredients but hope that is helpful!
